"Frosty's Nose" is next in the advent calendar. This carrot cake Ramos Fizz inspired cocktail had a nice orange hue and white foam, which made me think of Frosty the Snowman. The holiday spiced rum rounded out the flavor.
For the drink:
-2 oz spiced rum* (BLY)
-2 oz acidified carrot juice**
-1/3 oz ginger simple syrup
-1 1/2 oz heavy cream/cream cheese***

Combine all the cocktail ingredients except the heavy cream/cream cheese and seltzer in a shaker, and shake for forty-five seconds. Add ice and the heavy/cream cream cheese and shake for 15 more seconds. Pour through a Hawthorne and fine mesh strainer into your glass. Allow to settle two minutes. Top with seltzer.
*Set a sous vide to 170 Fahrenheit. Add 2 cups of silver rum, 1/2 cup of shredded carrots, 3 peppercorns, 3 cardamom pods, 3 cloves, 1 cinnamon stick, and 1/4 teaspoon of nutmeg. Allow to cook for 2 hours. Strain and reserve.
**Whisk 150g of carrot juice with 4g of citric acid. Reserve in the fridge.
***Whisk 1/4 cup of heavy cream and 1 large spoonful of cream cheese together. Reserve in the fridge.
