ADVENT CALENDAR: THE FIRST SNOWFLAKE

For Day Twenty of the cocktail advent calendar, I created "The First Snowflake." I love the first snow of the year, even though it's often just a dusting that doesn't stick. The only unfortunate part is the often muddy sopping mess it leaves. This drink tries to reflect that with it's dark base underneath the layer of "snow" and the imperfect outline of the snowflake on top.

For the drink:

-1 1/2 oz gin (Xoriguer Mahón)

-1 1/2 oz cherry aperitivo (Don Cicci & Figli Cerasum)

-3/4 oz fresh lime juice

-1/2 oz simple syrup

-3 peppercorns

-Egg white from one egg


Garnish:

Snowflake cookie cutter

Cocoa powder


Glassware:

Coupe glass


Place your glass in the freezer. Add the drink ingredients to a cocktail shaker and shake for 45 seconds without ice. Fill the shaker three-quarters full of ice and shake until chilled, 5-10 seconds. Pour through a Hawthorne and fine mesh strainer. Wet the bottom cookie cutter. Spread cocoa powder on a plate and rub the cookie cutter in it. Gently press into the layer of egg white foam.
