"Ancestral Smoke" is another Autumn drink that tries to capture the season in a drink, particularly with the olfactory element. In addition to the smoke, I loaded this drink with apple in different forms.

For the drink:

-1 oz Calvados (Boulard VSOP)

-1 oz Apple pechuga brandy (Asimina Pumila Baltimore Spirits Co.)

-3/4 oz Sage liqueur

-1/4 oz fernet (Fernet Lario)

-1 oz fresh apple cider

-1/2 oz fresh lemon juice


Chai smoke*


Diamond glass

*Make bring two cups of water to a boil, add the water to tea pot, and steep two chai tea bags.

While the tea bags steep, combine the drink ingredients in a cocktail shaker with ice and shake 10 seconds. Pour through a Hawthorne and fine mesh strainer into the glass. Add a small piece of dry ice to the teapot and angle the mouth of the tea pot over the glass to catch the smoke.

To avoid any issues DON'T drink the tea that had dry ice in it. It can be very harmful if swallowed.
