ANDEAN CLOUDS

I recently acquired some Chilean Pisco and Bolivian Cocalero Negro, so I wanted to make an Andean themed drink. I used ingredients found in the Andes region and incorporated an egg white for the cloud effect that would also give the drink an extra silkiness.

For the drink:

-1 1/2 oz Pisco reservado (Alto de Carmen Reservado)

-3/4 oz Cocalero Negro

-1 1/2 oz POG nectar (Passionfruit, Orange, Guava Nectar)

-3/4 oz fresh lime juice

-1/3 oz simple syrup

-1 Egg white


Glassware:

Fizz glass


Place your glass in the freezer. Add all the ingredients to a cocktail shaker and shake for 40 seconds without ice. Add ice and shake for 15 more seconds. Pour through a Hawthorne and fine mesh strainer into your glass. Allow to settle for 2 minutes then enjoy.
