ATLANTIC PUFFIN

Sarah received the board game Wingspan for her birthday, and we have become obsessed with it. Much of the game play depends on using bird cards. Each card has original art work of birds from North America for the original game and Europe and Oceania for the expansion packs. They helped me start thinking of various cocktail ideas and one is the Atlantic Puffin. This smooth drink, with a hint of peaty Scotch that reminds me of a sea breeze, made me think of these fascinating birds.

For the drink:

-1 1/4 oz dark rum (Meyers's)

-1/4 oz Islay Scotch (Laphroaig)

-1/3 oz triple sec (Cointreau)

-1/3 oz crème de cacao (Tempus Fugit)

-1/4 oz simple syrup

-2 dashes orange bitters (Regans)

-1 whole egg

Garnish:

Peychaud's bitters

Angostura bitters

Orange bitters (Regans)

Cocoa powder

Glassware:

Martini

Place your martini glass in the freezer. Combine all of the drink ingredients to cocktail shaker and shake vigorously for 1 minute without ice. Add ice until three-quarters full and shake again for 10 seconds. Strain through a Hawthorne and fine mesh strainer into your martini glass. Allow to settle for about 2 minutes. Draw your puffin using an eye dropper to add the bitters for the beak. Use a cocktail stick or toothpick to draw outline of the bird with the cocoa powder.
