AUTUMNAL BITTERS

I never tire of autumnal baking spices. So, I guess I'd prefer to keep pumpkin spice lattes and pumpkin spice beers around all year. This bitters recipe captures those fall flavors.

Ingredients:

-1/2 cup 151 Everclear

-1/8 cup rye whiskey (WhistlePig PiggyBack)

-1/3 teaspoon gentian

-1/3 teaspoon birch

-1/3 teaspoon wormwood

-1/2 tsp vanilla extract

-1 cinnamon stick

-2 allspice berries (lightly crushed)

-2 cloves (lightly crushed)

-6 dried apple slices

-1 tablespoons of 2:1 simple syrup (2:1 simple syrup is 2 parts sugar 1 part water)


-Pour all ingredients into a mason jar and stir to combine.

-Allow to sit for five days in a dark place, shaking once a day.

-Pour the bitters through a fine mesh strainer and a coffee filter, and store the bitters in a clean mason jar or dropper bottle.
