"Banana Clouds" is the fifth cocktail in the "Smoke Series." I muddled a smoked ingredient into this cocktail prior to shaking for a smokey element. The smoked banana in this cocktail was phenomenal on its own and was an amazing base to this drink.

For the drink:
-1 1/4 oz aged rum (Equiano)
-1/4 oz cognac (Hennessy VS)
-1/2 oz crème de cacao (Tempus Fugit)
-1/3 oz fresh lemon juice
-1/4 oz simple syrup
-2 dashes orange bitters (Regans)
-1 smoked banana
Garnish:
Banana slice
Glassware:
Coupe
Heat a smoker to 225 degrees Fahrenheit. Use a fork and prick the banana through the skin in two to three places on each side. Place in the smoker and cook for 30 minutes. Allow to cool for thirty minutes before use without the skin.
Place your glass in the freezer. Add the rum and banana to a shaker and muddle for 5 seconds. Combine the remaining ingredients with ice and shake for 10 seconds. Pour through a Hawthrone and fine mesh strainer. Garnish.
