CARAMEL TART

Week Seven of the Great British Bake Off was Caramel Week. The signature challenge was caramel tarts. I based this drink off Chigs' chocolate, coconut, and ginger caramel tart. The flavors blended extremely well and a bit of cold seltzer lightened the drink in a refreshing manner.

For the drink:

-2 oz vodka (Grey Goose)

-1/2 oz crème de cacao (Tempus Fugit)

-1/3 oz caramel sauce

-1/3 oz ginger simple syrup

-3/4 oz fresh lemon juice

-1 dash toasted coconut tincture


-2 oz seltzer water


Garnish:

Lemon peel


Glassware:

Tom Collins


Make a caramel sauce. Combine all of the ingredients except the seltzer to a cocktail shaker and shake for 15 seconds with ice. Add ice to your glass. Pour into your glass through a Hawthorne and fine mesh strainer. Top with cold seltzer. Garnish.
