Wine reductions can add an interesting depth to your cocktails. The gentle simmering of the wine and added sugar brings out new flavors. In addition, I caramelized the sugar before adding the wine for additional richness.

Ingredients:
-1 cup vino verde (Espiral)
-3/4 cup turbinado sugar
-In a medium saucepan add the turbinado sugar over medium-high heat.
-In a separate sauce pan add the wine and turn to medium heat.
-Once the sugar begins to melt and caramelize, about 3-6 minutes, add the wine.
-Bring to a simmer, then reduce the heat to medium-low and continue simmering for fifteen minutes.
-Reserve in the refrigerator.
