CARBONIC COFFEE

"Carbonic Coffee" was a great cocktail to try out my new Perlini cocktail carbonation system. The carbonation with this coffee forward cocktail produced an enlivened cocktail.

For the drink:

-2 oz gold rum (Plantation Rum Isle of Fiji)

-1/2 oz coffee liqueur (Mr. Black)

-1/3 oz allspice liqueur (St Elizabeth)

-1/2 oz fresh lemon juice

-1/4 oz simple syrup

-Absinthe rinse (Wigle Absent Minded)


Garnish:

Lemon peel


Glassware:

Flute


Add a small amount of absinthe to your glass to coat and dump the excess. Combine all the cocktail ingredients in a Perlini carbonating shaker with ice. Shake for four seconds then inject the CO2. Shake again for six seconds. Allow to settle for 30 seconds. Garnish.
