GBBO BAKEWELL TART

Here is my interpretation of the classic British dessert, the Bakewell Tart. I wanted to bring the almond and raspberry to the forefront and with the lemon juice I was able to use some basic principles of a sour to turn this tart into an overwrought pun.

For the drink:

-2 oz Caffo Amaretto (or your favorite almond liqueur)

-3/4 oz Black Raspberry Chambord

-1 oz Fresh lemon juice

-1 Egg white


Garnish:

Lemon peel

Almond


Glassware:

Martini or Nick and Nora


Add all of the ingredients to a cocktail shaker without ice and shake for 30-45 seconds. Add ice until 3/4 full and shake for another 5-10 seconds. Pour through a Hawthorne and fine mesh strainer. Garnish.
