This is my interpretation of the technical challenge from episode 6 of the Great British Bake Off's 11th season: the matcha crepe. I wanted to make a drink to adopt this popular Japanese ingredient. To complete the the theme of the week, I incorporated a red apple slice on the white egg foam to mimic the country's flag.

For the drink:
-1 1/2 oz brandy (Tierra Miega Orujo)
-1 oz matcha tea
-1 oz simple syrup
-1/2 oz fresh lemon juice
-1/2 oz fresh lime juice
-1 egg white
Garnish:
Pink lady apple slice
Glassware:
Martini
Heat up 8 ounces of water, but don't boil. Add 1 1/2 teaspoons of matcha powder and whisk until incorporated. Reserve 1 ounce of tea to cool and enjoy the other 7 ounces warm while you wait.
Cut off an apple slice. To achieve a perfect circle, I used the metal cap from a balsamic vinegar bottle to punch out the garnish. I tried cutting around various objects at first to achieve a circle but the tough apple skin made this difficult.
Pour all of the drink ingredients into a cocktail shaker and shake for 40 seconds without ice. Add ice until it is three-quarters full and shake for another 10 seconds. Pour through a Hawthorne and fine mesh strainer into your martini glass. Add your apple garnish.
