Hawaij is a Yemeni spice blend, that has both a savory and sweet variation. For this simple syrup, I elected to use the "sweet" blend. I added dates to the syrup for additional richness and depth.

Ingredients:
-150 g warm water
-120 g sugar
-100 g fresh dates
-1 tablespoon fresh ground cardamom
-1 tablespoon dried ginger
-1/2 tsp ground cinnamon
-1/4 tsp nutmeg
-1/4 tsp cloves
-Set a sous vide to 140 degrees F.
-Whisk the sugar and warm water together until the sugar dissolves.
-Cut up 100 g of fresh dates into smaller pieces.
-Add the simple syrup, dates, and spices to a ziploc bag and cook sous vide for two hours.
-Strain out the spices and dates first through a fine mesh strainer and then through a paper coffee filter to catch the finer particulates.
-Reserve in the refirgerator.
