HEART OF WINTER

"Heart of Winter" is the first cocktail of the new year. This cocktail brought warmth and wintry citrus to get through a cold night. The añejo tequila and chocolate/coffee liqueur provided depth and the Campari, lemon, and blood orange foam added a fresh bite.

For the drink:

-1 1/2 oz añejo tequila (ArteNOM Seleccion de 1146)

-1/2 oz Borsci (You can substitute 1/4 oz crème de cacao and 1/4 oz coffee liqueur)

-1/2 oz Campari

-1/2 oz fresh lemon juice

-1/3 oz simple syrup

-2 dashes angostura bitters


-Blood orange juice foam


Garnish:

Lemon peel


Glassware:

Nick and Nora


Combine 4 oz blood orange juice and 1/4 tsp agar agar in a shallow container. Use an immersion blender to blend. Ensure the blade is not totally submerged to incorporate air.


Combine all the cocktail ingredients in a shaker with ice and shake for ten seconds. Pour through a Hawthorne and fine mesh strainer into your glass. Spoon the foam on top. Garnish.
