In the late Aughts, India had an international campaign to attract tourists with the slogan that gave the name of this drink "Incredible India." The range of flavors and spices from India truly is incredible and I based this drink on the plethora of flavors from the region. I decided to complete the theme with an representation of the Indian flag using orange and lime peels.

For the drink:

-3/4 oz white rum (Bly)

-3/4 oz arrack (Batavia Arrack van Oosten

-1 oz mango juice

-3/4 oz fresh sweet lime juice

-1/4 oz fresh lemon juice

-1/3 oz macadamia orgeat

-1 bay leaf

-3 green cardamom pods

-2 cloves

-3 peppercorns

-5 mint leaves

Cocktail umbrella



Add the rum and arrack to a small bowl. With a mortar and pestle gently pulverize the cardamom, cloves and peppercorn and add to the rum-arrack combo. Also put the bay leaf in the mixture. Let steep for half an hour. Add the mango juice to a cocktail shaker with the mint and muddle for 10 seconds. Combine the rum-arrack mixture with the remaining cocktail ingredients in the shaker. Fill with ice until half full and shake for 10 seconds. Pour through a Hawthorne and fine mesh strainer into your coconut half. Garnish.
