INDIAN SIMPLE SYRUP

I wanted to create a simple syrup that brought together a number of flavors from the Indian subcontinent. The richness and depth of flavor in this syrup proved fantastic.

Ingredients:

-1 1/2 cup water

-1 cup white sugar

-1 cup sweet tamarind

-3/4 cup fresh ginger

-1 teaspoon fenugreek

-1 teaspoon ground turmeric


-Toast the fenugreek in a pan over medium-high heat until fragrant. About 1 minute

-Add the sugar and water to a medium saucepan over medium-high heat and stir until the sugar dissolves.

-Once dissolved, add the tamarind, ginger, fenugreek and turmeric.

-Bring to a simmer, then reduce the temperature to medium-low and simmer for 15 minutes.

-Remove from the heat and allow to rest for 30 minutes.

-Pour through a fine mesh strainer and a coffee filter.

-Reserve in the fridge.
