KIWI KOOLER

Back to my country tiki theme with the "Kiwi Kooler" for New Zealand. I made the golden kiwi fruit the basis of the drink. The muddled kiwi paired well with the citrus and lychee simple syrup.

For the drink:

-2 oz dark rum (George Bowman)

-1 golden kiwi fruit

-1 1/2 oz fresh cara cara orange

-3/4 oz fresh lime

-1/2 oz fresh ruby grapefruit juice

-1/2 oz lychee simple syrup


Garnish:

Kiwi fruit

Orange peel


Glassware:

Coupe


Make your kiwi bird garnish from the cara cara orange peel. Combine the rum and sliced kiwi in a cocktail shaker. Muddle the kiwi for about 5 seconds. Add the remaining cocktail ingredients, fill with ice until three quarters full, and shake for ten seconds. Pour through a Hawthorne and fine mesh strainer into your glass. Garnish.
