LYCHEE FIZZ

I wanted another drink to feature the lychee simple syrup I made, so I came up with the Lychee Fizz. The lychee simple syrup provided an interesting foundation for this drink that features 2 types of gin and a range of other flavors.

For the drink:

-1 oz gin (Xoriguer)

-1 oz amber gin (Inverroche Amber)

-1 oz fresh lime juice

-1/2 oz mango juice

-3/4 oz lychee simple syrup

-2 dashes brown butter tincture

-4 sage leaves

-1 Egg white

-Top with 2 oz seltzer water


Garnish:

Grapefruit peel

Sage


Glassware:

Fizz


Add the gin to a cocktail shaker with the sage and muddle for 10 seconds. Combine the remaining ingredients and shake without ice for 45 seconds. Add ice and shake for 10 seconds. Pour through a Hawthorne and fine mesh strainer into the glass. Allow to settle for 2 minutes then add the cold seltzer. Garnish.
