Lychees are a wonderful Asian fruit. They are quite sweet with a flavor profile that melds grape-like elements and a hint of citrus. To enhance this simple syrup further, I incorporated ginger for a bit of spice and lime zest for more tartness.

Ingredients:
-8 oz shelled lychees
-1 tsp fresh grated ginger
-1 tsp lime zest
-1 cup water
-1 cup demarara or turbinado sugar
-Shell 8 oz of lychee fruit with the seed in the middle removed.
-Grate the ginger and lime zest.
-Add the water and sugar to a medium sauce pan and turn to medium-high heat.
-Whisk until the sugar dissolves and add the lychees, ginger and lime zest.
-Bring to a boil and immediately reduce to a simmer for 10 minutes.
-Remove from the heat and allow to steep for 20 minutes.
-Pour through a fine mesh strainer, allow to cool to room temperature and reserve in the fridge.
