It's Kentucky Derby Day so time for a Collarless variation of a mint julep. I split the base spirit and added some rhum agricole and Ancho Reyes Ancho Chile liqueur to it for some heat and earthiness. I also substituted in ginger simple syrup. The final touch was a mint bouquet with several varieties, including chocolate, sweet, and lemon mint. I did not have a julep tin, so I used this horn cup. Horns and hooves are the same material. Thus, I can force this into a horse theme.

For the drink:
-1 1/2 oz bourbon (Isaac Bowman Port Barrel)
-1/3 oz chile liqueur (Ancho Reyes)
-1/4 oz rhum agricole (Rhum JM VO)
-1/3 oz ginger simple syrup
-Assortment of mint

I know I'm breaking julep orthodoxy. Since I don't have a julep tin I'm doing this differently. Brush the inside of the glass with the mint bouquet. Add the mint and bourbon to a mixing glass. Muddle the mint for 5-10 seconds. Add the chile liqueur, rhum, and ginger simple syrup. Add ice till the liquid is submerged and stir for 20-30 seconds. Add ice to your glass until two-thirds full and pour the cocktail in. Top with ice as needed. Garnish.
