PLUMES OF PAKISTAN

On the Great British Bake contestants often fail when they try to use rose as a key flavor. "Plumes of Pakistan" is my attempt to make a rose flavored tiki cocktail. A key ingredient is Rooh-Afza, a popular rose flavored syrup from Pakistan. Additionally, I used fresh sweet lime juice, a citrus from the region.

For the drink:

-1 1/2 oz rhum agricole (Rhum JM VSOP)

-1/2 oz fresh sweet lime juice

-1/2 oz fresh ruby grapefruit juice

-1/3 oz pistachio orgeat

-1/8 oz Rooh Afza

-Egg white


Garnish:

Pineapple fronds

Cocktail cherries


Glassware:

Rocks glass


Add water to a rocks glass and place in the freezer at an angle. This should take about 6 hours. Combine the drink ingredients in a cocktail shaker and dry shake without ice for 45 seconds. Add ice until three-quarters full and shake for 15 seconds. Pour through a Hawthorne and fine mesh strainer into the glass with the frozen ice shard. Garnish
