A rambutan simple syrup brings the flavor of a South Asian fruit to your cocktail. The flavor reminds me of grape with additional flavors to enhance the complexity.

Rambutan Simple Syrup
This recipe makes about 8 oz.
Ingredients:
12 Rambutans
3/4 cup water
1/2 cup Sugar (demerara or white)
-Place a sauce pan on the stove and turn on to a medium-high heat.
-Immediately add the water and sugar, stirring until you dissolve all of the sugar.
-Add the rambutan and bring to a boil.
-Once it reaches a boil reduce the temperature and simmer for 15 minutes.
-Remove from the heat and leave to steep for an hour.
-Pour into a mason jar through a strainer and refrigerate.
