SCORPION GOBLET

This drink breaks from the country theme. I whipped up a riff on the classic Scorpion Cup. I really liked the pistachio orgeat paired with the cara cara oranges.

SERVES 2


For the drink:

-3 oz white or lightly aged rum (Diplomatico Planas)

-3/4 allspice dram (homemade or St Elisabeth)

-1/2 oz Espirit de June

-4 oz fresh cara cara orange juice

-1 oz fresh lime juice

-1 oz pistachio orgeat


Garnish:

Lime peel

Cocktail cherries


Glassware:

Martini


Combine all of the drink ingredients in a cocktail shaker with ice. Shake for 10 seconds then pour through a Hawthorne and fine mesh strainer. Invert a squeezed lime to make a well for the flame. Pour a little of a high proof spirit and ignite with a match.
