"Spooky Scandinavia" is another entry in the Halloween Series. This drink hopefully captures the sense of walking through a Nordic forest in autumn. I added the gooseberry caviar to help evoke the feeling.

For the drink:
-1 1/4 Spelt whisky (Broger Dinkel)
-1/2 Pine liqueur (Zirbenz)
-1/3 Aquavit (Linie)
-1/4 Limoncello (Villa Massa)
-1/4 Crème de cacao (Tempus Fugit)
-Sage liqueur mist
Garnish:
Lapponia caviar* (Lapponia Lakka)

*Make the caviar ahead of time. Add vegetable oil to a glass and put in the freezer for at least thirty minutes until chilled, but not thickened. Measure out 50g of Lapponia Lakka and .5 g of agar agar. Whisk together while bringing to a boil. As soon as it reaches a boil remove from heat and allow to cool for a two minutes. Use something that allows you to drop the warm liqueur into the oil. Strain out the oil and rinse in cold water.
Combine the drink ingredients in a cocktail mixer with ice and stir for 30 seconds. Pour through a Hawthorne strainer. Mist with the sage liqueur. Take a bite of the caviar and follow it with a sip of the drink.
