"Spring's Smokescreen" is the second drink in the "Smoke Series." I incorporated smoke into this cocktail by shaking the finished drink in a mason filled with smoke from burned pineapple sage. The smoke earthy smoke combined with the lighter and fresher cocktail ingredients created wonderful contrast.

For the drink:
-2 oz gin (Jaisalmer)
-3/4 oz elderflower liqueur (St Germain)
-1/2 oz fresh lime juice
-1/3 oz Hawaij simple syrup
-Pineapple sage
Garnish:
Lime peel

Place your glass in the freezer for several minutes. Add the sage to a fire-safe container and blowtorch it. Blow out the flame and immediately cover with a mason jar to trap the smoke. After about a minute place a lid on the jar to seal in the smoke. Combine all your other ingredients in a cocktail shaker with ice and shake for 10 seconds. Pour through a Hawthrone and fine mesh strainer into a glass. Quickly add the drink to the mason jar with the smoke to ensure you don't lose much smoke. Shake for 3-5 seconds (longer if you want a smokier cocktail). Pour into your chilled glass. Garnish.
