I wanted to see what kind of simple syrup I could get from the source. I found some pieces of sugarcane at a local international grocery store, and decided to experiment. While I liked the flavor, the amount of sugar can and water I needed to get about 4 ounces of syrup surprised me.

Ingredients:
-4 cups water
-2 14-inch pieces of sugarcane.
-Chop the sugar cane into small pieces (FYI this is a lot of work)
-Add the water and sugarcane to a medium pot and boil on a medium high heat until the liquid has reduced and become more syrup-like. This takes about 45 minutes.
-Reserve in the refrigerator.
