I use the recipe below to make sweet tamarind simple syrup. I'm hooked on it. I've just started experimenting with it, and found it pairs well with bourbon, scotch, and tequila. You can buy sweet tamarind at many international supermarkets, especially Asian and Latin super markets. If you can't find it there, it's a little bit more pricey, but available on Amazon here. Prepare to take your favorite cocktails to the next level.

Sweet Tamarind Simple Syrup
This recipe makes about 1 quart.
Ingredients:
1 lb Sweet tamarind
4 cups Water
2 cups Sugar (I used demerara sugar)
-Shell the sweet tamarind.
-Add the water and sugar to a sauce pan, and turn the stove to medium-high.
-Stir until the sugar is dissolved.
-Once dissolved, add the shucked sweet tamarind and bring to a boil.
-After it comes to a boil reduce to medium-low and simmer for 30 minutes.
-Remove the mixture from the heat, and let cool for an hour.
-Pour through a fine mesh strainer into a quart sized mason jar and refrigerate.
