This cocktail, "The Coral Reef," is 7 micro cocktails, with each about an ounce or a little more of liquid. I wanted to make a tiki cocktail that covered a range of flavors and colors. I was able to create the red, orange, yellow, green, and clear cocktails with various liquors. Blue and purple required the use of butterfly pea flowers. They are one of the few natural blue dyes that's also edible. And with the introduction of an acid the color turns violet. This was definitely a different and enjoyable drink because I could jump to a variety of different flavors depending on the order I took sips.

For the drink:
-Red:
-1/4 oz sliver rum (Bly)
-1/8 oz Campari
-1/4 oz fresh ruby grapefruit juice
-1/8 oz simple syrup
-Orange:
-1/4 oz sliver rum (Bly)
-1/8 oz Lappinia
-1/3 oz fresh lemon juice
-1/4 oz fresh mandarin juice
-1/8 oz simple syrup
-Yellow:
-1/4 oz sliver rum (Bly)
-1/4 oz limoncello
-1/8 oz fresh lemon juice
-1/8 oz pineapple juice
- 3 drops orange bitters
-Green:
-1/4 oz sliver rum (Bly)
-1/8 tsp creme de menthe
-1/3 oz fresh ruby grapefruit juice
-3/4 tsp macadamia orgeat
-Blue:
-1/4 oz sliver rum (Bly)
-4 butterfly pea flowers
-1/4 oz Cointreau
-1/8 oz vanilla vodka
-3 drops angosturea
-Violet
-1/4 oz sliver rum (Bly)

-1/4 oz fresh mandarin juice
-1/8 oz simple syrup
-Absinthe wash (Wigle)
- Clear
-1/4 oz sliver rum (Bly)
-1/4 oz fresh lime juice

In two separate glasses add the rum for the blue and violet cocktails and add the butterfly pea flower. Allow to steep for about 20 minutes or until they are bright blue. Add the ingredients for each cocktail to a a different glass with ice. Stir with a bar spoon to chill. Stir the blue cocktail first because the introduction of any acid will change the color of the cocktail. Rinse the spoon after stirring each cocktail. Strain and pour each into your glass.
