"The Japanese Dove" is the first drink in the "Smoke Series." For this cocktail, I pre-smoked the glass by roasting some raw peanuts with a kitchen blowtorch. I allowed the cold glass to absorb the aroma as I made the drink and then I poured it in. I really enjoyed the hint of umami the soy sauce gave the drink.
For the drink:
-1 1/4 oz American whiskey (Barrell Dovetail)
-3/4 oz sake vermouth (Oka Kura 'Japanese Bermutto' Vermouth)
-1/2 oz calvados (Boulard VSOP)
-1/2 oz fresh lemon juice
-1/3 oz blue agave simple syrup
-5 drops soy sauce (Kikkoman)
-Raw unsalted peanuts

Rocks glass
Place your glass in the freezer for several minutes. Add the peanuts to a firesafe container and blowtorch them. Blow out the flame and immediately cover with your glass to trap the smoke. Combine all your other ingredients in a cocktail shaker with ice and shake for 10 seconds. Pour through a Hawthrone and fine mesh strainer. Garnish.
