TONIC SYRUP

Rather than relying on mediocre tonic water, make your own flavorful tonic syrup and then add seltzer water.

Ingredients:

-8 oz water

-1/3 oz pomegranate juice

-1 tablespoon cinchona bark

-7 rosemary leaves

-3/4 teaspoon fresh grated ginger

-4 strips lemon zest

-4 strips lime juice

-1/3 oz fresh lemon juice

-1/3 oz fresh lime juice

-Pinch of salt

-3/4 lemon grass stalk


-1/2 cup sugar

-1 tablespoon citric acid



-Pour all of the ingredients from the water through the lemon grass stalk in a medium sauce pan.

-Bring to a simmer over medium high heat, and then cover and simmer on low for 30 minutes.

-Take off the heat, stir in the sugar and citric acid, and leave to steep for half an hour.

-Pour the syrup through a fine mesh strainer and a coffee filter, and refrigerate in a mason jar.


USE A 1:4 TONIC TO SELTZER WATER RATIO FOR GIN AND TONICS.
